Craig Stoneman – Executive Chef

Born and raised in England, Executive Chef Craig Stoneman has worked in the hotel industry for over 30 years. Chef Stoneman developed his culinary skills in England, Canada & the Caribbean, and immigrated to Canada in 1982 when he accepted the position of Sous Chef for the opening of the renowned King Edward Hotel in Toronto. Chef Stoneman was one of the original members of Culinary Team Victoria and competed in many culinary competitions held throughout Canada and the United States.
Chef Stoneman joined the opening team of the Delta Victoria Ocean Pointe Resort and Spa as Executive Chef in 1992. He combines his wealth of international experience with a unique knowledge of the local region and strives to always use the freshest local Vancouver Island ingredients to design seasonally inspired menus that will delight any palette. He is passionate about creating unique presentations, giving equal time to the flavour & texture of each dish.

Mike Weaver – Restaurant Chef

Restaurant Chef Mike Weaver is a native Vancouver Islander who was inspired to pursue a career in the culinary arts, in large part due to his family’s history in the chocolate business. Mike began his career with an apprenticeship at the Coast Westerly Hotel in Courtenay BC, finishing at the top of his class at North Island College. He completed his final two years at Camosun College Interurban Campus while working as an apprentice under Chef Stoneman at the Delta Victoria Ocean
Pointe Resort and Spa. Mike placed first in the Regional then second in the Provincial Apprenticeship Black Box Competition in Kelowna B.C. in 1996 and has competed in five Grand Marnier Dessert Challenges, consistently placing in the top 3 and winning the Grand Prize in 2003.

Determination and hard work have led Mike to his current position as Restaurant Chef for Lure. Mike is a true leader, inspiring his team to create dishes that challenge and push their creativity, as seen in the innovative menus that have been created for Lure.
